ZUCCHINI PINEAPPLE BREAD | |
3 eggs 2 c. sugar 1 c. oil 2 c. shredded zucchini (you need not peel) 3 c. flour 1 tsp. baking powder 1 tsp. salt 1 tsp. baking soda 1 tsp. vanilla 1 c. drained crushed pineapple 1/2 c. raisins 1 c. finely chopped nuts Beat eggs until fluffy. Add sugar, oil, and vanilla. Add zucchini and mix well. Add flour, salt, baking soda and baking powder. Mix well. Stir in pineapple, raisins and nuts. Bake in two greased and floured bread pans at 325 degrees for one hour. I often use six small pans. |
