ZUCCHINI PINEAPPLE NUT BREAD 
3 eggs
2 c. sugar
1 c. oil
2 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. cinnamon
1 c. chopped nuts
2 tsp. baking soda
1/2 tsp. baking powder
3/4 tsp. nutmeg
2 c. shredded zucchini
8 oz. crushed pineapple, drained

Beat first 4 ingredients until creamy. Combine flour, salt, cinnamon, chopped nuts, soda, baking powder, and nutmeg. Spoon in zucchini and drained pineapple.
