ZUCCHINI-ORANGE NUT BREAD 
3 c. flour
1 1/2 c. sugar
1 c. nuts, chopped
4 1/2 tsp. baking powder
1 tsp. salt
2/3 c. oil
2 c. grated zucchini (2 med.)
4 tbsp. grated orange rind
4 tbsp. fresh orange juice
4 eggs

In large bowl with fork, mix flour, sugar, nuts, baking powder and salt. In medium bowl with fork, beat eggs. Stir in oil, zucchini and orange rind and juice. Stir liquid mixture into flour mixture just until mixed. Spread evenly in greased and floured loaf pans. Bake for 1 hour at 350 degrees.
