ZUCCHINI NUT BREAD 
3 eggs
2 c. sugar
1 c. oil
2 tsp. vanilla
3 c. grated zucchini
1/2 c. chopped nuts
1/2 c. raisins, optional
3 c. flour
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. grated lemon rind

In mixing bowl, beat eggs; add sugar, oil, vanilla; mix well. In separate bowl mix together dry ingredients and zucchini with wet ingredients. Then add nuts and raisins. Bake in 2 greased and floured bread pans at 325 degrees for 1 hour 20 minutes.
