ZUCCHINI NUT BREAD 
3 eggs
1 c. oil
2 sugar
2 c. peeled grated zucchini
3 c. self-rising flour
3 tsp. cinnamon
1 c. chopped nuts
1 tsp. vanilla

Beat together eggs, sugar and oil. Mix zucchini. Add flour, nuts, cinnamon and vanilla; mix well. Pour into 2 greased and floured loaf pans. Bake 1 hour and 15 minutes in 325 degree oven.
