SCALLOPED MEAT BALLS 
2 c. raw potatoes, sliced
1 c. carrots, sliced
1 med. onion, sliced
2 tsp. salt
1 lb. ground beef
1/4 c. dry bread crumbs
1 egg
1/3 c. milk
1/4 tsp. thyme
2 tbsp. butter
1 can mushroom soup
1/2 tsp. paprika
1 c. sour cream

Parboil potatoes, carrots, and onion in teaspoon of salt. Drain. Mix ground beef, egg, bread crumbs, milk, thyme, and remaining salt. Shape into balls. Brown in butter in frying pan. Remove and drain. Pour all drippings from pan. Stir soup, sour cream, and paprika into frying pan. Heat, stirring constantly until hot. Pour half of vegetables, then meat balls and soup mixture into a baking dish. Top with remaining vegetables. Cover and bake at 375 degrees for 30 minutes.
