BAKED SCALLOPS 
1 lb. fresh scallops
1 lg. green pepper
1 lg. onion
1/2 lb. mushrooms
1 c. dry wine or vermouth
Flour
1 clove garlic
1 bay leaf
1/4 tsp. thyme
1 c. Swiss cheese
butter as needed

Wash scallops and dry. Salt and pepper, then roll in flour. Set aside. Chop green pepper and onion into large pieces. Slice mushrooms. Saute vegetables with one clove chopped garlic in butter. Set aside. Brown scallops in butter for a few minutes. Add a little more flour and stir. Add onion and green pepper, mix and add wine or vermouth. Add one bay leaf and a touch of thyme. Cook a few minutes. Put in shallow casserole, top with grated Swiss cheese and dot with butter. Bake at 350 degrees for 15 minutes, then broil 2-3 minutes until cheese starts to brown. Serve with rice or potatoes, vegetable, and crisp bread.
