MOLASSES ZUCCHINI BREAD 
3 eggs
2 cups brown sugar
3 cups finely shredded zucchini
1/2 cup oil
2 tsp. vanilla
1/3 cup molasses
4 1/2 cups all-purpose flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. nutmeg
1 cup raisins or currants

Beat eggs; add brown sugar and zucchini. Stir in oil, vanilla and molasses. Sift together flour, salt, baking powder, baking soda and nutmeg. Add this to your zucchini, then fold in raisins.

Grease and flour 2 loaf pans. Fill 2/3 full. Bake at 325°F for 1 hour and 15 minutes. Cool 10 minutes and remove from pans.

Yield: 2 loaves.

I like molasses, so I liked the flavor. I also added about a tablespoon of cinnamon. The bread wasn't very moist. Other zucchini bread recipes I have made use a cup of oil. I suggest using a cup of oil (or 1/2 cup oil and 1/2 cup applesauce to make it healthier). Also, it was fully cooked in 1 hour, so I would suggest a shorter cooking time than the recipe states.

Kathy I am so glad you put in your suggestions on the oil!! My bread was dry also so this time I will try 1 cup. I don't bake much but have a ton of Zucchini in our garden 😊️
