MOLASSES ZUCCHINI BREAD | |
3 eggs 2 cups brown sugar 3 cups finely shredded zucchini 1/2 cup oil 2 tsp. vanilla 1/3 cup molasses 4 1/2 cups all-purpose flour 1 tsp. salt 1 tsp. baking powder 1 tsp. baking soda 1 tsp. nutmeg 1 cup raisins or currants Beat eggs; add brown sugar and zucchini. Stir in oil, vanilla and molasses. Sift together flour, salt, baking powder, baking soda and nutmeg. Add this to your zucchini, then fold in raisins. Grease and flour 2 loaf pans. Fill 2/3 full. Bake at 325°F for 1 hour and 15 minutes. Cool 10 minutes and remove from pans. Yield: 2 loaves. |
