CHICKEN BAKE 
1 pkg. scalloped potato mix
1 tsp. salt
1/4 tsp. black pepper
3 chicken breasts, split
1 can golden mushroom soup
1 tbsp. minced onion
1 2/3 c. water
1 c. sour cream

Sprinkle dry potatoes in bottom of 13"x9" greased pan (or crock-pot). Sprinkle salt and pepper on chicken. Place chicken on potatoes, skin side up. Blend potato seasoning mix, soup, onion, water and sour cream and pour over chicken to completely cover. Sprinkle top with paprika.

Bake at 375°F for 50 to 60 minutes.

Pretty good recipe, though I used low sodium chicken broth instead of water and seasoned the chicken with Rosemary and a small amount of crushed red pepper I mixed in some extra virgin olive oil and rubbed onto my chicken breast. I did not use the Paprika because I used crushed red pepper.
