PEACHES WITH RASPBERRY PUREE | |
8-10 ripe peaches 2 c. water 1 c. sugar Dash of vanilla 2 pkgs. frozen raspberries Drop peaches into boiling water for 3 minutes. Remove and peel as quickly as possible. Have ready a boiling syrup (the water and sugar cooked together for 5 minutes). Transfer the peaches to this immediately after peeling. Cook until just tender, then cool in syrup. Arrange in serving dish. Whirl raspberries in a blender and strain or put through a food mill. Spoon over peaches and chill. Serve with whipped cream in the cavity of each peach. |
