CORNBREAD SALAD 
2 pkg. cornbread mix (jalapeno may be used)
3 slices crisp fried bacon, drained & crumbled
1 1/2 c. chopped celery
1/2 c. chopped onion
2 med. tomatoes, chopped
1 med. bell pepper, chopped
2 boiled eggs, chopped (optional)
1 1/2 c. mayonnaise
Salt & pepper to taste

Bake cornbread mix following instructions on package. Allow to cool completely, then crumble in a bit mixing bowl. Add all ingredients, tossing and mixing well. Store covered in the refrigerate.
