CORNBREAD TACO BAKE 
1 1/2 lbs. hamburger
1 (1 1/8 oz.) pkg. Durkee Taco Seasoning
1/2 c. water
1 (12 oz.) can whole corn
1/2 c. chopped green pepper
1 can (8 oz.) tomato sauce
1 (8 1/2 oz.) pkg. corn muffin mix
1 (2.8 oz.) can Durkee French fried onions
1/3 c. (1 oz.) shredded Cheddar cheese

Brown meat and drain. Stir in taco seasoning, water, corn, pepper and tomato sauce. Pour into 2 quart casserole.

In separate bowl, prepare muffin mix according to directions except add 1/2 can fried onions. Spoon mixture around outer edges of casserole. Bake uncovered 400 degrees for 20 minutes. Top cornbread with cheese and remaining onions. Bake 2-3 minutes longer.

I cooked the meat in a cast iron skillet and used it to bake in. I also used salsa instead of tomato sauce. And we Love cheese, so I added about a cup. Yummy!
