BANANA CAKE 
2 1/4 c. plain flour
1 1/4 c. sugar
1 1/2 c. well mashed ripe bananas (3-4)
1/2 c. butter
2 eggs
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. vanilla
1/2 tsp. salt

Preheat oven to 375 degrees. Grease and flour 13 x 9 inch cake pan. Mix butter, eggs and sugar until texture is smooth and creamy. Add dry ingredients, vanilla. Stir in bananas. Pour into pan. Bake until done. Cool. Serve with or without frosting.

WHIPPED CREAM FROSTING:

2 c. heavy or whipped cream
1/4 c. confectioners' sugar
1/8 tsp. salt
1 tsp. vanilla

In small bowl with mixer medium speed beat cream with sugar and salt until stiff peaks form. Fold in vanilla, keep frosting in refrigerator until serving time.
