LOW-CAL APPLE OATMEAL MUFFINS 
1 1/2 c. instant oatmeal
1 c. all-purpose flour
4 pkgs. Sweet and Low
3/4 tsp. salt
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1 egg white, lightly beaten
1 c. buttermilk
2 tbsp. vegetable oil
1 1/2 c. finely chopped, cored, peeled apple (8 oz.)

Preheat oven to 300 degrees. Grease muffin pan with 2 1/2 inch diameter cups, with cooking spray; set aside. Place oatmeal in blender; process 2 minutes until it resembles coarse flour. In medium sized bowl, combine oatmeal, flour, sugar, salt, baking powder, soda, and cinnamon; stir until evenly mixed.

Make a well in the dry ingredients.

In separate bowl, combine egg white, milk, and oil; whisk evenly to blend. Pour over dry ingredients. Stir until well blended (DO NOT beat). Stir in apple until evenly distributed, fill each muffin cup to 2/3 full. Bake in preheated oven 20 to 25 minutes. Test with toothpick in center to see if they are done.
