PINEAPPLE CUPCAKES 
1 3/4 c. All purpose flour (sifted)
1/2 c. shortening
1/4 tsp. salt
1 c. light brown sugar
1 egg
1 sm. can crushed pineapple
1 tsp. baking soda

Cream shortening and sugar; add egg and beat. Dissolve soda in pineapple and add alternately with sifted flour and salt. Fill paper muffin cups 1/2 full and bake in moderate oven 350 degrees to 375 degrees, 20 to 25 minutes. These cupcakes are good plain or frosted with a confectioners' sugar icing. Yield 12 to 14 cupcakes.

These are absolutely fantastic! Although, I wouldn't qualify them as cupcakes so much as muffins. Nonetheless, they're delicious and I'm making them for the third time!
