PINEAPPLE CUPCAKES 
32 graham crackers, crushed
1 c. milk
1 c. sugar
1/2 c. butter
1 c. nuts, chopped
3 eggs (beaten)
1 tbsp. baking powder
1 lg. can crushed pineapple, drained

Mix first 7 ingredients all together and put into paper lined muffin pans. Bake at 350 degrees, approximately 20 minutes.

While the above is baking, mix:

1 c. pineapple juice
1 c. sugar

Mix for 10 minutes. (I also add 3/4 of the pineapple to this mixture). When cupcakes are done, remove from the oven and spoon 1 teaspoon juice mixture over each cupcake. Cupcake will be very moist and very good.
