BLACK-EYED PEA SOUP 
1/2 lb. bacon, diced
1 cup chopped celery
1 cup chopped onion
1/2 cup chopped green pepper
1 can beef consomme
2 cans stewed tomatoes
2 cans black-eyed peas
seasoning to taste

Sauté bacon with seasonings. Add tomatoes, peas and consomme. Simmer 30-45 minutes. Season to taste with salt, pepper, garlic salt and hot sauce. This makes 6 to 8 servings.
