BOB'S STUFFED PEPPERS | |
6 medium bell peppers (mixed colors) 1 lb. ground beef or turkey 1 (15 oz.) can sloppy joe sauce (Manwich or your favorite) 1 (12 oz.) can tomato sauce (Hunts) 4 tbsp. honey 1 medium onion of your choice 3/4 to 1 cup dried cranberries 1 (5 oz.) box spicy saffron yellow rice (Mahatma) Prepare rice per package directions. Cut off tops of peppers and remove core and seeds. Mix sloppy joe sauce, tomato sauce and honey - set aside. Dice onion and sauté with beef until beef is browned - drain fat - add prepared rice, half the tomato sauce mixture and cranberries - heat thoroughly. Fill each pepper with meat/rice mixture and arrange upright in casserole dish. Top with remaining tomato sauce mixture. Bake at 350°F for 1 hour. Submitted by: Bob Giddings |
