STUFFED PEPPERS WITH MEAT & CRANBERRIES | |
6 medium bell peppers (mixed colors) 1 lb. ground beef or turkey 1 medium onion 1 can Manwich or other Sloppy Joe sauce 1 15 oz can tomato sauce 4 tbs. honey 3/4 to 1 cup dried cranberries 1 5 oz. pack Mahatma Spicy Saffron Yellow rice (cooked) Prepare rice as per package. Cut off tops of peppers and remove core and seeds. Mix Sloppy Joe sauce, tomato sauce and honey; set aside. Dice onion and sauté with beef until beef is browned. Drain fat. Add prepared rice, half the tomato sauce mix and cranberries. Heat thoroughly. Fill each pepper with meat/rice mixture and arrange upright in casserole dish. Top with remaining tomato sauce.
