STUFFED PEPPER MEAT LOAF | |
1 sm. green pepper, seeds removed & cut lengthwise 2 eggs, slightly beaten 1/2 c. milk 1/2 c. processed American sharp cheese, shredded 3 tbsp. catsup 1/2 c. fine bread crumbs 1 tbsp. salt 1/8 tsp. pepper 1 tsp. Worcestershire sauce 2 lbs. ground beef Cook pepper covered in boiling water with salt added for 5 minutes. Drain and set aside. Combine eggs, milk, bread crumbs, cheese, salt and Worcestershire sauce and pepper. Add beef and mix well. Stuff pepper halves with some of the meat and pat half the remaining meat in bottom of foil lined loaf pan. Place pepper halves cut side down on meat and carefully press remaining meat over and around peppers to make a smooth loaf. Bake covered at 300 degrees for 45 minutes and uncover and bake 15 minutes. Spoon off fat. |
