HUNGARIAN-STYLE STUFFED PEPPERS (UNSTUFFED!) | |
This will cook on top of stove so a Dutch oven or small soup pot works best. ground chuck or ground sirloin rice (preferably UNCLE BEN'S® long grain - NOT instant rice) 1 (46 oz.) can tomato JUICE (the large one) several bell peppers, cut in 4 to 6 strips salt and black pepper, to taste Mix ground beef and rice (ratio about 1/3 cup rice per 1 pound beef). Season with salt and pepper. Make into meat balls the size of a tennis ball. Place in Dutch oven. Add the cut up bell peppers. Pour the ENTIRE CAN of tomato juice over the meat balls and bell peppers. Cook on top of stove. Bring to a boil, then lower heat and simmer for 45 minutes or so. This is an excellent dish... great with garlic toast or corn bread. Might want a salad on the side. Delicious! Since they are not "stuffed", some do not care for the flavor of the pieces of pepper, but love the flavor the peppers add to the dish! Submitted by: MaryAnn Prevots |
