BLACK-EYED PEA SOUP 
5 slices bacon, in sm. pieces
1 c. chopped onion
2 c. chopped tomatoes
1 clove minced garlic
3 c. water
2 bouillon cubes
4 cans peas
3 c. grated Cheddar or Swiss cheese
2 tbsp. jalapeno peppers (optional)

Saute bacon, onions, tomatoes, garlic, jalapenos (if desired); add salt and pepper to taste. Add water and bouillon. Drain peas and add to above. Add cheese and simmer until melted.
