CHEESE BROCCOLI SOUP (BLACK EYED
PEA)
 
1 1/2 lbs. fresh broccoli
1 pt. half and half
2 c. water
1 lb. pasteurized process cheese
3/4 tsp. salt
1/2 tsp. pepper
1/2 c. cornstarch mixed with 1 c. cold water

Steam broccoli until tender. Place half and half and water in the top of a double boiler; add cheese, salt and pepper. Heat until all the cheese is melted. Add steamed broccoli. Mix cornstarch and water in small bowl. Stir into cheese mixture in the top of a double boiler and heat over simmering water until soup thickens. Makes 10 (1 cup) servings.
