FRIED ZUCCHINI 
2 lbs. sm. zucchini
3 tbsp. butter
3 tbsp. oil
Salt and pepper
1 tbsp. chopped parsley
2 eggs
1 egg yolk
4 tbsp. grated Parmesan

Cut off hard ends of zucchini; wash and slice them. Heat the butter and oil in a frying pan until smoking. Toss in the zucchini, sprinkling with salt, pepper and parsley. Saute the zucchini until liquid has evaporated and the slices begin to crisp.

Pour the 2 eggs and egg yolk into a bowl and beat them, adding the Parmesan. Two minutes before zucchini are fully cooked, pour the beaten egg mixture into the frying pan and mix. As soon as the eggs begin to set, remove from the heat and serve.
