CRAB CAKES 
1 lb. crab meat
1/2 c. bread crumbs
1/2 c. melted butter
1 tsp. prepared mustard
2 eggs, stirred but not beaten
1/2 tsp. salt
1/4 tsp. black pepper
6 drops hot pepper sauce
Evaporated milk

Mix all ingredients, using just enough milk to form soft patties and saving 1/2 the crumbs to coat the pattie cakes. Fry until brown on a medium hot, heavy griddle, using 2 tablespoons vegetable oil. Keep cooked cakes in a warm oven until ready to serve.

Makes 8 large cakes.
