DUCK A L'ORANGE 
2 ducks (2 1/2 lbs. each)
1 c. water
6 slices bacon
1 (6 oz.) can frozen orange juice, thawed
1 tbsp. cornstarch
1/2 tsp. ginger
1/2 tsp. salt
1 clove garlic, chopped
3/4 tsp. mustard
2 to 3 unpeeled apples, quartered

In each duck cavity, place 1 plus quartered apple. Place in pan breast sides up and close. Cover with bacon strips. Roast at 350 degrees for 1 1/2 to 2 hours, watching carefully.

After 1 hour, remove bacon strips and brush with orange sauce every 10 minutes until done.

ORANGE SAUCE:

In small saucepan, heat orange juice, ginger, mustard, salt and garlic to boiling. After basting, combine 1/4 cup water and cornstarch and add to remaining orange sauce. Cook on low heat until sauce thickens, stirring constantly.

Remove apples from ducks, discard. On heated platter, serve duck with orange sauce on the side. Serves 4.
