PIG FARM POTATOES 
8 cooked potatoes, cooled and diced
1/2 lb. Swiss cheese, diced
1/2 cup chopped red onion
1/2 cup (1 stick) butter, melted
2 celery stalks, diced
1/2 tsp. garlic salt
1 tbsp. parsley
1/2 tsp. white pepper
6 bread slices, torn into bite sized pieces
3/4 cup milk
1/4 cup half & half
4 oz. shredded Monterey Jack cheese

OPTIONAL:

cooked diced ham or Italian sausage
multi colored diced peppers
sliced mushrooms

Note: The optional ingredients can be added to make a one dish meal. I also serve a green salad with it as well.

Preheat oven to 350°F

In large bowl mix together potatoes, Swiss cheese, onion, seasonings, bread and melted butter. Add optional ingredients, if desired.

Pour into a greased 9x13-inch baking dish. Mix half & half and milk together and pour over top of potato mixture. Sprinkle shredded Monterey Jack cheese on top of potatoes and milk mixture.

Bake at 350°F for 1 hour.

Wow, this recipe is fantastic! The potatoes are soft and melt in your mouth with the creaminess of the cheese. I love the addition of the red onion and parsley. This makes a delicious side dish for any meal.
