NACHO CHEESE DIP 
1 tbsp. oil
1 lg. onion, chopped
1 garlic clove OR
1/4 tsp. diced minced garlic
1 tbsp. flour
1 tbsp. chili powder
1 (16 oz.) whole tomatoes, chopped, don't drain
1/4 c. canned diced green chilies
1 lb. Velveeta, cubed

Heat oil and saute onion and garlic; stir in flour and chili powder, cook 1 minute over low heat. Add tomatoes and chilies and cook 5 minutes. Reduce to low heat, add cheese and stir until all melted. Serve with nacho chips. Makes 4 cups.
