SWEET AND SOUR CHICKEN | |
1 lb. chicken breast 1 sm. can pineapple chunks 2 carrots, sliced very thin 1 sm. onion, cut into thin strips 1 sm. green pepper, cut into thin strips 1 bottle Kikkoman sweet and sour sauce 2 tbsp. oil 1 tbsp. soy sauce Cut chicken into 1 inch cubes and brown in soy sauce and hot oil in skillet over medium high heat. Add 1/4 cup water, cover, simmer for 20 minutes, stirring twice. Meanwhile, cut carrots into very thin slices, 1 onion and 1 green pepper into thin strips. Stir vegetables and entire bottle of Kikkoman sweet and sour sauce into chicken mixture. Simmer, uncovered, 10-15 minutes. Stir often. Add the pineapple chunks and cook for 10-15 minutes more. Serve with UNCLE BEN'S® long grain rice or plain white rice. Makes 4 servings. |
