CREAM OF BROCCOLI SOUP 
1 tbsp. oil
1 sm. onion, minced
2 c. chicken broth
1 1/2 c. fresh broccoli, coarsely chopped
1/2 tsp. salt
Dash of pepper
1 c. heavy cream

In a saucepan, heat the oil; add mixed onion and cook until onion is translucent, about 5 minutes. Add chicken broth, broccoli, salt and pepper. Cook, covered until broccoli is tender, about 15 minutes. Remove from heat and cool to room temperature, about 15 minutes. In blender, blend broccoli-broth mixture until broccoli is finely chopped, but not totally pureed. Return to saucepan, add cream and heat until hot. Taste for seasoning. Serve hot. Serves 4.
