RHUBARB BREAD 
1 1/2 c. brown sugar
2/3 c. oil
1 egg
1 c. sour milk
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
2 1/2 c. flour
1 1/2 c. diced rhubarb
1/2 c. chopped nuts (opt.)

Combine sugar and oil. Mix well. Add egg, beat. Add dry ingredients alternately with sour milk. Add diced rhubarb and nuts. Pour into loaf pans. Bake at 350 degrees for 1 hour.

Bake plain or top with: 1 tbsp. butter 1/2 tsp. cinnamon

Two small loaf pans, one large loaf pan.
