OYSTER DRESSING 
5 tbsp. minced onion
1 1/2 c. chopped celery
4 tbsp. butter
4 c. cooked rice or 3 qts. bread
4 tsp. chopped parsley
2 eggs, slightly beaten
1 tbsp. poultry seasoning
Salt and pepper
2 doz. ground oysters and liquid
1 c. turkey stock and ground, cooked giblets

Saute onion and celery in butter. Add rice or moistened bread, parsley, seasonings, oysters, and stock with giblets. Mix and heat thoroughly. Add beaten eggs and mix well. Yield: Stuffing for 10 pound turkey.
