STRAWBERRY CHICKEN 
4 chicken breasts, skinned and deboned
1 tbsp. butter
1/2 tsp. grated, fresh ginger
3 tbsp. strawberry jam
1 tbsp. water

Season the chicken breasts with salt and pepper. Put oil and butter in a frying pan, saute chicken until tender and cooked through. Remove from pan and add remaining ingredients. Cook for about 5 minutes, blending the ingredients well with the pan juices. Put chicken back into the pan with the sauce and heat for a few minutes. Serve.

The ingredient list didn't include oil, but I used an equal amount. More ginger would be good. Strawberry jam is very, very sweet, so I added a tablespoon of fresh lemon juice. It brightened the sauce quite a bit. I sliced the breasts in half horizontally so they cooked more quickly. I'll try this same recipe with orange marmalade, apricot jam, or other jams.
