EXTRA-SPECIAL BROILED CHICKEN | |
3 lb. chicken fryer, quartered 1 c. oil 1/3 c. lemon juice 1 tbsp. soy sauce 1 tsp. oregano leaves 1/2 tsp. salt 1/4 tsp. pepper 1 clove garlic, minced Mix together ingredients and pour over chicken and marinade covered overnight in refrigerator, turning once. Arrange chicken on broiler pan skin side down. Broil 9 inches from heat. Broil 30 minutes, baste with marinade sauce, a few times while cooking. Turn after 30 minutes and continue to cook 30 more minutes. When brown, cover chicken and cook the last 10 minutes, covered. |
