CARROT AND APPLE SALAD 
2 tbsp. creamy peanut butter
2 tbsp. mayonnaise
2 lg. apples
4 med. carrots
1 1/2 c. chopped celery
1 c. raisins

1. Mix peanut butter and mayonnaise. Set aside.

2. Peel, core and chop apples. Grate carrots.

3. Combine apples, carrots, celery and raisins with peanut butter and mayonnaise mixture.

4. Store in refrigerator at least 2 hours (overnight is preferable).

5. Serve on individual lettuce beds. Serves 6-8.
