CARROT AND GREEN PEA SALAD 
2 1/2 c. shredded carrots
1 c. cooked green peas
1/2 c. mayonnaise
1 tbsp. lemon juice
1/2 tsp. sugar
1/2 tsp. salt
1/8 tsp. pepper
Lettuce leaves

1. In a medium bowl, combine carrots and peas.

2. In a small bowl, combine mayonnaise, lemon juice, sugar, salt and pepper. Gently stir into carrot and pea mixture.

3. Serve chilled on a bed of lettuce. Serves 8.
