MEATBALL AND POTATO STEW | |
6 tbsp. beef base (Minors or Tones) 2 quarts water (8 cups) 3 lb. potatoes 1 onion (any onion will do) 1 bell pepper (I put one of each: green, yellow and red) 4 cups rice (any grain you like will do) MEATBALLS: 2 lb. ground beef 5 tbsp. Season-All (Lawry's; season to your taste) 2 tbsp. garlic powder (optional) 2 tbsp. lemon pepper seasoning (optional) 3 tbsp. dried onions (optional) First in a 6-quart or bigger pot put the water in and bring to a boil. Once water is boiling add the beef base. Stirring often with no lid on the pot. Boil for about and hour. While the water is boiling start making your meatballs. Mix the ground beef, Season-All, garlic powder, lemon pepper and dried onions. Mix very well with your hands. Roll the mixture together in the size of a golf ball. Set aside. Cut up the onions, bell peppers and potatoes real small. Prepare the rice according to package directions: 4 cups of rice will need 8 cups of water. After an hour you are ready to add everything to the pot except the potatoes. Add the meatballs to the pot and let them cook for about a half an hour. Then finally add in the potatoes and let them cook for 15 minutes. It is ready to serve to your family and friends. Enjoy.
