THYME LONDON BROIL ON THE GRILL 
London broil

MARINADE:

1/2 (10 oz.) bottle soy sauce (La Choy)
2-3 tbsp. thyme
1/4 cup beer or dry white wine (optional)

Sprinkle the steak evenly with thyme, coating the whole top side of the steak generously. Place in Ziploc baggie and pour in beer/wine and soy sauce. Either marinade for 3 days or freeze and pull out 3-5 days before cooking.

Soak mesquite wood chips for 1-12 hours. Start grill. Place meat while heat and grill is hot to sear the meat. Place wood chips on immediately. Lower heat to medium and smoke for 1-2 hours.

Note: Tastes best when well to medium well done.
