SCALLOPED OYSTERS 
3 1/2 c. Premium Saltines, finely crumbled
1 qt. fresh oysters, do not drain
1 c. celery (inner stalks), chopped
Blend of 2 oz. Worcestershire sauce + 5 drops Tabasco (no more)
Salt & pepper
1 1/4 sticks (5 oz.) butter

Grease casserole lightly with butter. Melt butter. Simmer celery for 15 minutes in barely enough water to keep from burning. Put 1/3 cracker crumbs in casserole and add in layers: 1/2 of oyster, 1/2 of celery, 1/2 of condiments and 1/3 of melted butter. Repeat these layers. Put final 1/3 cracker crumbs on top, cover with final 1/3 of butter; sprinkle lightly with paprika. Bake in oven at 350 degrees for 45 minutes.
