BANANA BRAN MUFFINS | |
1/2 c. shortening 1 c. sugar 2 eggs 2 lg. ripe bananas 1 tsp. vanilla 3/4 c. liquid (1 tbsp. lemon juice & milk) 1 c. flour 1/2 c. whole wheat flour 1/2 c. oatmeal 1/2 c. all bran cereal 1 tsp. baking soda 1 tsp. salt 1 c. raisins, soaked in warm water Soak all bran in soured milk for 5 minutes. Cream shortening and sugar, add eggs and vanilla and mashed bananas. Add milk and bran. Gradually add dry ingredients and mix well. Add raisins and spoon into muffin papers in tins. Bake at 350 degrees for 20 to 25 minutes. Makes about 20. Serve warm with butter. |
