BANANA BRAN MUFFINS 
1 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/3 c. sugar
1/4 tsp. cinnamon
1 c. All Bran
1 c. skim milk
1 lg. mashed banana
1 egg (1/4 c. Eggbeaters can be used instead)
3 tbsp. vegetable oil

In a large bowl, put the baking powder and flour. In a smaller bowl, mix the beaten egg, the All Bran, the milk, mashed banana, and the vegetable oil. Let this mixture soak for five minutes and then add to first mixture. Mix together and then add 1/2 cup chopped walnuts and 1/2 cup white raisins. Bake in a preheated 350 degree oven for 20 minutes.

To make the muffins really healthful, I leave out the sugar and salt and sometimes use 1/2 cup whole wheat flour. These muffins will be heavier in texture.

I am assuming that the sugar, cinnamon and salt go in with the dry ingredients, but the recipe doesn't say. The end result is pretty tasty.

Made these today and they turned out great! I cut the sugar in half and used some Splenda in it...will keep this recipe for the future. Very moist and tasty, praised by my friends at coffee..
