AUNT SHARON'S SUGARLESS BANANA
BRAN MUFFINS
 
1 c. flour, sifted
2 1/2 tsp. baking powder
1/2 tsp. salt
1 1/2 tsp. cinnamon
1 c. whole bran cereal
2 sm. ripe bananas, mashed
1 egg, beaten
1/4 c. skim milk
2 tbsp. oil
1/2 c. currants

Mix flour, baking powder, salt, cinnamon and bran. Combine egg, bananas, currants, milk and oil. Make a well in center of dry ingredients and add liquids all at once. Stir just to moisten. Fill well greased muffin pans 2/3 full. Bake at 400 degrees for 15 minutes or until done. Serve at once or warm later.
