SPICED BANANA BRAN MUFFINS 
1 cup bran flakes cereal
1/2 cup skim milk
1 cup all-purpose flour
1 egg
1/2 cup honey OR brown sugar
1/4 cup (1/2 stick) melted butter OR shortening
1 ripe banana
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. ground ginger
1/4 tsp. ground nutmeg
1/4 tsp. ground cloves (optional)

OPTIONAL INGREDIENTS:

chopped nuts
raisins
Craisins
chopped crystallized ginger

Preheat oven to 375°F. In a small bowl, soak cereal in milk for about 5 minutes.

Combine other ingredients in a large mixing bowl, then add cereal mixture. Beat at medium speed, scraping bowl often, until well mixed, about 1 to 2 minutes. Fold in 1/2 to 1 cup nuts or other optional ingredients if desired. Spoon into well greased or paper lined 12 cup muffin pan, filling cups 2/3 full.

Bake at 375°F for 20 to 25 minutes, or until tops spring back when touched lightly. Cool 5 minutes, then remove from pan.

Yield: 12 or more muffins.
