BANANA BRAN MUFFINS | |
2 c. unsifted all-purpose flour 2 c. unprocessed bran 1 c. sugar 3/4 c. chopped walnuts 3/4 c. raisins 2 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. salt 2 med. ripe bananas 2 lg. eggs 2 c. milk 3/4 c. vegetable oil 1. Heat oven to 425 degrees. Grease 48 (2 1/2") muffin pan cups. 2. In large bowl, mix flour, bran, sugar, nuts, raisins, baking soda, cinnamon and salt; set aside. 3. In medium size bowl, mash bananas. Beat in eggs, milk and oil until blended. Stir into flour mixture just until moistened (batter will be lumpy). Spoon batter into greased muffin cups, filling each 3/4 full. 4. Bake 15 minutes, or until cake tester inserted in center comes out clean. Yield: 48 small muffins. |
