SUPER RAISIN BRAN COCONUT BANANA
MUFFINS
 
1 cup natural bran
1 cup skim milk
1/2 cup vegetable oil
2 eggs
2 tsp. vanilla extract
4 medium bananas, mashed
2 cups whole-wheat flour
1/2 cup brown sugar
5 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 tsp. cinnamon
1/2 cup shredded coconut
3/4 cup raisins
1/2 cup sunflower seeds

Preheat oven to 375°F.

Combine bran and skim milk in a small mixing bowl; stir and then let soak until milk is absorbed.

Combine remaining ingredients in a large mixing bowl and then add bran mixture. Use large paper cupcake liners and fill almost to the top.

Bake at 375°F for 20 minutes.

Makes 18 to 20 large muffins.
