BANANA BRAN MUFFINS 
1 c. sifted flour
3 tbsp. sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
1 c. honey bran muffin mix
1 well beaten egg
1 c. mashed ripe banana
1/4 c. milk
2 tbsp. melted shortening

Sift together flour, sugar, baking powder and salt. Stir in bran. Mix remaining ingredients; add all at once to flour mixture, stirring just to moisten. Fill greased muffin pans 2/3 full. Bake at 400 degrees for 20-25 minutes. Makes about 10. I suggest doubling the batch for bigger and more muffins.
