BANANA BRAN MUFFINS 
1 lg. egg
3/4 c. packed light brown sugar
1 1/3 c. mashed ripe bananas (3 or 4)
1/2 c. raisins or chopped walnuts
1/3 c. vegetable oil
1 tsp. vanilla
3/4 c. all purpose flour
3/4 c. whole wheat flour
1/2 c. oat bran or unprocessed wheat bran
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. ground cinnamon
1/4 tsp. salt

Heat oven to 375 degrees. Grease 12 regular size muffin cups. With a spoon beat egg and sugar in a bowl until smooth. Add bananas, raisins, oil and vanilla. Beat until blended. Thoroughly mix flours, bran, baking powder, baking soda, cinnamon and salt in a large bowl.

Add banana mixture and fold in until dry ingredients are moistened. Spoon into muffin cups and bake 20 to 25 minutes until brown and springy to the touch. Turn out onto a rack to cool. Serve warm with butter or jam.
