ZUCCHINI WITH LENTILS 
2 med. zucchini
1/2-3/4 c. lentils (rinse thoroughly)
2 onions, chopped
1/2 c. vegetable oil
1 tsp. basil
1 tsp. parsley (dry or fresh)
Salt & pepper to taste

Wash zucchini and cut into chunks. Brown onions in oil. Add zucchini, lentils, seasoning and 3 cups of water. Stir and bring to boil. Lower heat and simmer for 1/2 hour or until lentils and zucchini are tender. Variation: Add 1 (1 pound) can crushed or whole chopped tomatoes.
