EASY SUGAR COOKIES 
1 cup (2 sticks) butter
1 cup sugar
1 egg
3 cups all-purpose flour
1/2 tsp. salt

Preheat oven to 350°F.

Mix and cream butter and sugar. Add eggs; mix until creamy. Add flour and salt and mix until smooth. Roll in small balls; flatten with glass dipped in sugar. Make very thin.

Bake at 350°F until edges start to brown.

Great tip Nikki! I made this recipe once before. This time I saw your comment and I added the egg and vanilla. More flavor and softer texture made it an even bigger hit with the kids. I substituded whole wheat flour and added blue food coloring for a whole grain, blue boost!

Hi Randi,

You can add a few more tablespoons of flour at a time until your dough isn't so sticky (try not to add too much or the cookies will be tough).

Flour absorbs different amounts of moisture depending upon many different factors and a recipe normally needs to be adjusted for your own conditions.

I cut the recipe in half like Stacey mentioned and added almond extract instead of vanilla and an additional tablespoon or two of flour. YUMMY!! they come out more like shortbread than cookies but they're really delicious.

So I added the extra egg and vanilla, they came out really yummy. My husband and I experimented with half the recipe and added walnuts and semi sweet chocolate and it came out really really yummy. But it could use a little bit more sugar. We're making more tonight and I'm going to add about half a cup more sugar. But to resolve the sticky problem I did add a few more tablespoons of flour.

I really liked this recipe, suprisingly enough.I made some slight modifications, namely more sugar, and some cinnamon IN the dough and a sugar cinnamon mix on the outside as i flattened them. i do not like super browned sugar cookies so i did not let them brown around the edges. super good and very easy!

Hey Blanche, I followed this recipe using Nikki's little advice and I also wanted some more kick, so I added 1 tablespoon of cinnamon to a small batch of dough and it added that nice little kick! I love this recipe and use it every year at Christmas!

These cookies were okay. I am a young baker and found it very dry . I would reccomend to put a touch of water. The two eggs did help but I would need more liquid. Anyone got a good frosting recipe?
