EASY SUGAR COOKIES 
1 cup (2 sticks) butter
1 cup sugar
1 egg
3 cups all-purpose flour
1/2 tsp. salt

Preheat oven to 350°F.

Mix and cream butter and sugar. Add eggs; mix until creamy. Add flour and salt and mix until smooth. Roll in small balls; flatten with glass dipped in sugar. Make very thin.

Bake at 350°F until edges start to brown.

For the recipe I added: 1 1/2 cups brown sugar, 2 teaspoons baking soda, 2 teaspoons vanilla and 3 eggs. They came out awesome! I couldn't stop eating them!!

Just moved into my first apartment and my pantry doesn't contain everything it should. I live quite far from any grocery stores and I tend to do my baking around 1am. I was craving cookies more than I could possibly say. After searching online for what felt like hours every recipe I found contained baking soda and baking powder or brown sugar, all of which I am lacking. So this recipe was a life saver. Simple. Delicious. (A touch dry) as expected but as someone else said "that's why we have milk" mmmm mmmm. Also the dough alone tastes bomb-tastic!

I loved these cookies, however I did add to the recipe. I did all the steps, didn't add the salt, but did add about 2 tsp of vanilla extract. I also took them out as soon as I saw the slightest bit of gold which helped to make them softer. Rate: 4 stars

I added an egg and instead of rolling them into balls and flattening them I rolled it into a lot using was paper, chilled the log in the freezer for 15 minutes and cut them into perfect little circles and dipped one side in sugar. Baked sugar side up, 10 minutes at 350°F and they came out perfect.

Cookies do need vanilla. Refrigerate cookie dough for one hour, roll into balls and place on cookie sheet. Prime bottom of glass by pressing 1st cookie, THEN dip glass in sugar each time to press rest of cookies, glass won't stick to cookies. Don't press too flat, they spread when baked. Use colored sugar for holidays.
